My potluck Thursday contribution




This is a fairly cheap recipe and a mighty tasty one at that. You can make a ton of it for under $20!! The recipe I'm giving you now is for the large amount. So if you don't want as much as i made for the potluck just divide everything in half.


Creamy Chicken Pasta Salad
3 Broccoli heads ( i can't remember what they're actually called)
1 Red Pepper
3 cloves of Garlic
3 Boneless Chicken Breasts
1 32oz container of Chicken Broth
2 8oz containers of Chive and Onion Cream Cheese Spread
1/2 tbs of crushed Red Pepper
1/2 tbs of Black Pepper
1 12oz Faralle pasta

Step 1: Chop up broccoli, red pepper, the garlic, the crushed red pepper, and the ground black pepper. Combined it all together in a large pot with the broth and let it simmer for about 10 minutes or until the broccoli is soft.
Step 2: In another smaller pot heat up some water until it is boiling and place the chicken breasts in the water for about 10 minutes or until they are cooked completely through. (this part looks really disgusting)
Step 3: When the chicken is fully cooked take them out and let them cool off. Once they are cool start to pull it apart into strips. (it should look like pulled pork. same idea different meat)
Step 4: Place meat in with the broccoli, red pepper, garlic and broth. At this point you also want to add the Chive and Onion Cream Cheese. Mix it all together until it is an even consistency.
Step 5: Begin cooking pasta. Just follow the instructions on the package.
Step 6: Drain the pasta and mix it in with the other ingredients. Mix it all together nice and well.
Step 7: Place in the refrigerator and serve it while it is cold.
