Potluck Thursday and Tabbouleh

Potluck Thursday was a success! It was a ton of fun and there was so much yummy food! I took some photos of some of the food so everyone who didn't go could see what they missed.


This is most of the food we had, but sadly I didnt get a phot of Pete's chicken pasta salad, which was probably everyone's favorite dish there. In the corner we have crab salad and then tuna pasta, both delish.
Jenny made fried tofu which I thought was pretty good.


Alex made cute strawberry cupcakes with homemade icing.



Allison brought No-Bake Cookies, which I LOVE but it's always such a hassle for me to clean up after so I hardly make them. (Allison didn't have this problem, probably because she isn't as lazy as me and doesn't let the pots sit out for days).



I made Tabbouleh! I thought it was pretty good,
but something was wrong the the cucumber I used in it, which made it
taste not-as-good. But it was the cucumber's fault, not mine, and
that's what matters.

By the way, this is my mama's recipe. Thanks Mom!!
1 cup dry Bulgar (for those that don't know, and most dont, Bulgar is a type of grain)
2 cups water
2 medium onions or scallops
3 cups chopped parsley (or just wing-it)
1-2 large tomatoes
1 cucumber, seeded
1/4 cup olive oil
lemon juice.

Soak Bulgar with water for two hours or until all the water is soaked up. Cut up veggies and mix with the grain. Stir together olive oil and lemon juice, then mix in. Then BAM! Tabbouleh!!

Oh yes, we also had a ton of strawberries at the potluck.
